VEGAN TOFU TIKKA TACOS

Shruti of @shruskitchen made these amazing tacos using ONANA plantain tortillas. So good! Scroll below for the recipe. 
"I bring to you something that I was sure wouldn’t work but works surprisingly well : Vegan Tofu Tikka Tacos (a dish that was basically created for this alliteration). I used coconut yogurt to marinate the tofu along with the usual tikka masala spices (red chili powder, garam masala, chaat masala, coriander powder, salt), before baking. Meanwhile I made a spicy cilantro dressing and a cashew-tikka dressing with more coconut yogurt. I grilled some poblano peppers from @imperfectfoods and heated up some grain-free wraps from @onanafoods. Threw in some boiled corn and chopped avocado for good measure before assembling these delicious hybrid tacos. Coconut yogurt is my new best friend, in case I didn’t make that clear already 🥥 ."

INGREDIENTS

  • 2 ONANA TORTILLAS
  • 1 BLOCK TOFU 
  • 2 C COCONUT YOGURT 
  • 1 TSP RED CHILI POWDER
  • 1 TSP GARAM MASALA 
  • 1 TSP CHAAT MASALA
  • 1 TSP CORIANDER POWDER 
  • SALT TO TASTE 
  • 1/4 C CORN 
  • 1/2 AVOCADO
  • 3-4 POBLANO PEPPERS 
  • SPICY CILANTRO DRESSING 
  • TIKKA DRESSING 

INSTRUCTIONS

  1. Preheat oven to 400 F.
  2. Combine seasoning and yogurt to bowl and mix. 
  3. Slice tofu into cubes and press out any excess moisture.
  4. Add tofu to sauce bowl and marinate for 30 mins. 
  5. Boil corn until cooked. 
  6. Grill poblano peppers until cooked. 
  7. Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.
  8. Add tofu, corn, peppers and avocado to tortilla. Drizzle on sauces.
  9. Serve immediately and enjoy!
