TOFU "FETA" TACOS

INGREDIENTS

1-2 PIECES LETTUCE
-
1 BLOCK EXTRA-FIRM TOFU
-
1 TABLESPOON COCONUT OIL
-
2 TABLESPOONS LEMON JUICE
-
2 TABLESPOONS APPLE CIDER VINEGAR
-
1 TEASPOON BLACK PEPPER
-
2 TEASPOONS DRIED OREGANO
-
1 TEASPOON GARLIC POWDER
-
1 TABLESPOON NUTRITIONAL YEAST

4-6 CAULIFLOWER FLORETS
-
BUFFALO SAUCE OF CHOICE

1/4 CUP FROZEN VEGGIES, HEATED.

1 TABLESPOON OF SALSA OF CHOICE

1/4 AVOCADO, SLICED
INSTRUCTIONS

Place a block of tofu with paper towels underneath and on top of the block and then set something heavy (such as a pan) on it and let it sit for 10 minutes to remove excess water from the tofu.

Blend the block of tofu in a blender then add coconut oil, lemon juice, apple cider vinegar, dried oregano, black pepper, nutritional yeast, and garlic. Store in the fridge overnight.

Steam cauliflower florets and coat in buffalo sauce and set aside.

Slice avocado.

Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.

In one tortilla add veggies, salsa, avocado, and feta. In the other tortilla add buffalo cauliflower, lettuce, and sprinkle with tofu feta.

Serve immediately and enjoy!
