INGREDIENTS
- 4 ONANA TORTILLAS
- 1 CAN OF JACKFRUIT
- 1 TBSP. CURRY PASTE
- 1 4 OZ CONTAINER OF COCONUT YOGURT
- 1 TSP CURRY POWDER
- 1 C COOKED CHICKPEAS
- 1 TSP PAPRIKA
- 1 C CHOPPED KALE
- RED ONION - CHOPPED & FOR GARNISH
- CILANTRO
- LIME
- AVOCADO
INSTRUCTIONS
- Combine your jackfruit, curry paste, coconut yogurt, chopped kale, and curry powder in your instant pot/pressure cooker and cook on high pressure for 8 minutes. Can use stove top but stir frequently. Cook until jackfruit is soft and tender (10 mins on low/med heat).
- Toss your chickpeas in paprika and air fry or roast in the oven for 5 minutes.
- Heat individual tortillas on a dry pan until slightly browned, pliable, and fully heated.
- Assemble tacos and garnish with chopped onion and avocado.
- Serve immediately and enjoy!
